A bite of this cucumber salsa is like a party in your mouth! It’s fresh, it’s light, and it’s crisp and crunchy. Its everything you want in a salsa. It still has some diced tomatoes in it which keeps the flavors of original salsa in it too. The lime juice and parsley enhance the flavor of all the other ingredients. It’s great on its own salad but you can also serve it on the top of fish, chicken, or pork dishes.
- 400 gm ripped tomatoes, skinned, deseeded, chopped
- 400 gm peeled and chopped cucumber
- A bunch of chopped spring onion
- 50 gm chopped basil
- 50 gm chopped parsley
- 3 tablespoon olive oil
- 1 lime juice
- salt and pepper
Method of Preparation
- In a large bowl, mix all the ingredients together.
- Correct the seasoning and serve.
