Nepali Open MO:MO ( Sui Mai) Recipe – Chef Khum Thapa

Momos are something we all adore. let us show you a very different and delicious recipe for a Momo. This is Open Momos, in the exact similar way of Cantonese Sui Mai.


  • 350g fresh boneless chicken
  • 50g carrot
  • 50g spring onion
  • 50g shiitake mushroom
  • 15 g garlic
  • 15g ginger
  • 3 small pcs of green chilly
  • 1 tsp chicken stock
  • 10 ml soya sauce
  • 10 ml cooking wine
  • 15ml sesame oil
  • 1 egg white
  • 1tsp corn starch
  • ½ tsp pepper
  • salt to taste
  • Wonton wrap (readymade wrap)

Method of Preparation

  • Using a mini food processor, ground the chicken but make sure that it’s coarsely ground. You can also chop with a knife 0r you can cut into small dice also.
  • Chop the onion, ginger, garlic, spring onion, carrot and shiitake mushroom.
  • Mix the chicken with all the ingredients together, set aside in the fridge for 15 minutes.
  • Place about a tablespoon of the filling on each wrapper, gather up the sides and leave the center open. You might cut off the uneven edges with a pair of scissors if you like the sui mai to look prettier. Garnish the top with a chopped carrot. Steam in a steamer for about 8-10 minutes.
