Nepali Cucumber Salad (kaakro ko achar)


  • 5pcs medium Cucumber
  • 60g sesame seeds
  • 1 bunch fresh chopped coriander
  • 10g hog plum paste(labsi)
  • 4pcs chopped green chilies
  • 5g fenugreek seed
  • ½ tsp turmeric pwder
  • ½ tsp sichuan pepper(timur)
  • 20 ml mustard oil
  • 30g fresh green peas
  • Salt to taste
  • 1/2 tsp black pepper
  • 2 pcs dry chilly

Method of Preparation

  • Wash the cucumber and cut into dice shape. Add the salt and leave it for 10 min to release the water. Strain and keep a side.
  • Heat the frying pan and toast the sesame seeds and dry chilli.
  • Make the paste of sesame seeds, dry chilli, black pepper, Sichuan pepper with the help of little water.
  • Place the cucumber, hog plum paste, chopped green chillies, green peas, and paste in a mixing bowl.
  • Heat the mustard oil in a pan and crackle the fenugreek seed. When it turns into black, add the turmeric powder and pour into the bowl and mix it well.
  • Check the seasoning and finish with chopped fresh coriander and leave for 10 mins so, the mixture gets perfect flavour.
