Cheeno Himalayan Royale Salad – Chef Sandeep Khatri

Hog Millet also called Cheeno in Nepali is belongs to the family of Millet with all the requirements to be on the superfood as Quinoa. Still in Far West, Mid West and Tarai the cultivation is abundant. The rich in Protein, Fiber n Vitamin starts from humble range compared to counterpart Quinoa.

Ingredients

  • 4 cups of water (to soak)
  • 50 gms of coriander leaves
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 whole lemon
  • 5 tablespoon of olive oil (not mandatory)
  • 3 tomato skins
  • 1 teaspoon of chili flakes (not mandatory)
  • 2 pods of elaichi
  • Pinch of cinnamon powder
  • Pinch of white pepper
  • Salt to taste

Methods of Preparation

  1. Once the cheeno gets soaked and almost doubled
  2. Take a pressure cooker add the cheeno to water ratio (1:2)
  3. Add 2 tablespoon of oil just to ensure not to make clumsy or sticky
  4. Then add salt and give a 2 whistle and let it rest, but give a quick stir
  5. In the meantime, you make salsa diced tomato, cilantro, you can add corn, bell peppers any veggies or even steamed, grilled, pulled meats
  6. Then add elaichi seeds, chili, pepper, lemon juice, cilantro and toss it well then throw the Cheeno into the mixing bowl toss it well
  7. You can also enjoy it with gravies, curries good for weight loss, no carb lot of fibers.
